Maple Bacon
French Toast Muffins
On-The-Go Bite Sized Breakfast!
Ingredients:
French Toast Topping:
- 3 Tablespoons Milk
- 1 Large Egg (Slightly Beaten)
- 3 1/2 Cups Cinnamon Swirl Bread (Crusts Removed & Cut Into 1/2 Inch Cubes)
Muffins:
- 1 Cup Milk
- 1/2 Cup Butter (Melted)
- 1 Large Egg (Slightly Beaten)
- 1 Teaspoon Maple Flavoring
- 2 Cups All-purpose Flour
- 3/4 Cup Packed Brown Sugar
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
Sugar Topping:
- 1/4 Cup GODSHALL’S Turkey Bacon (Candied & Crumbled)
- 1/4 Cup Maple Syrup
- 2 Tablespoons Sugar
- 1/4 Teaspoon Ground Cinnamon
Instructions:
- Preheat oven to 400 Degrees F.
- Line a baking sheet with heavy duty foil. Coat the slices of turkey bacon with brown sugar and bake for approx. 10 minutes on each side.
- Allow bacon to cool. Then crumble the candied bacon and set aside.
- Turn oven down to 375 Degrees F for making the French toast muffins.
- For the French toast topping, combine in a medium bowl, milk, egg and cinnamon swirl bread cubes. Set aside.
- For the muffins, in a large bowl, combine the milk, melted butter, egg and maple flavoring.
- Then add the rest of the ingredients into the bowl. Flour, brown sugar, baking powder and salt. (Mix thoroughly)
- In a prepared muffin tin, place French toast mix evenly into each space. Then add the French toast topping evenly onto the batter. Gently press down on each.
- Bake for approx. 20-25 minutes. Make sure to check the muffins are fully cooked by inserting a toothpick into the center of each muffin. If the toothpick comes back clean, they are finished.
- Immediately brush or pour a small amount of maple syrup onto the top of each muffin.
- In a small bowl, mix together the sugar, cinnamon and candied bacon. Top off each muffin with a light sprinkle and allow to sit and cool for approx. 5 minutes.
- Remove from pan, serve and ENJOY!
